 Avgolemono Soup is a creamy Greek chicken soup with a tangy lemon flavor and silky texture. The combination of eggs and lemon creates a comforting and distinctive dish that’s perfect for a light meal.

Ingredients

  • 1 cup chicken broth
  • 1/2 cup rice or orzo
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 cup cooked chicken, shredded (optional)
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. In a pot, bring chicken broth to a boil. Add rice or orzo and cook until tender.
  2. In a bowl, whisk together eggs and lemon juice.
  3. Slowly ladle some hot broth into the egg mixture, whisking constantly to temper the eggs.
  4. Stir the egg mixture back into the soup, simmering gently until thickened. Add chicken if using.
