Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tbsp vinegar
  • Salt and pepper
  • Red pepper flakes (optional)

Instructions

  1. Toast the slices of bread.
  2. Mash the avocado and spread it evenly on the toasted bread.
  3. In a pot of simmering water with vinegar, poach the eggs until the whites are set but the yolks are still runny.
  4. Place the poached eggs on top of the avocado toast.
