Beef Burgundy is a rich and hearty beef stew simmered in red wine and flavored with aromatic vegetables and herbs. This classic French dish is perfect for special occasions and will delight your guests with its depth of flavor and tender meat.

Ingredients

  • 1.5 kg beef chuck, cut into cubes
  • 200 g bacon, diced
  • 3 cups red wine
  • 2 cups beef broth
  • 2 onions, chopped
  • 3 carrots, sliced
  • 4 cloves garlic, minced
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • 200 g mushrooms, sliced
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add the beef cubes and brown on all sides. Remove and set aside.
  3. Add onions, carrots, and garlic to the pot. Cook until softened.
  4. Stir in the flour and tomato paste, cook for 1 minute.
  5. Pour in the red wine and beef broth, stirring to combine.
  6. Return the beef and bacon to the pot. Add the bouquet garni.
  7. Bring to a boil, then reduce heat and simmer for 2.5 hours, or until beef is tender.
  8. In a separate pan, sauté the mushrooms until golden, then add to the pot.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh parsley before serving. Enjoy!
