Ingredients

  • 2 tbsp olive oil
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 1 bay leaf
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef cubes in batches, then transfer to a plate.
  2. In the same pot, add onion and garlic, cooking until softened, about 5 minutes.
  3. Return beef to the pot and add carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1 1/2 to 2 hours, until beef and vegetables are tender.
  5. Remove bay leaf. If the stew needs thickening, mix flour with a little water to form a slurry and stir into the stew. Simmer until thickened.
  6. Season with salt and pepper to taste. Enjoy!
