Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 medium beets, peeled and grated
  • 1 carrot, peeled and grated
  • 1 potato, peeled and diced
  • 1/2 head cabbage, shredded
  • 4 cups vegetable or chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp vinegar
  • Salt and pepper to taste
  • Sour cream for serving
  • Fresh dill for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in grated beets, carrot, and potato. Cook for 5 minutes, stirring occasionally.
  3. Add shredded cabbage, broth, tomato paste, and vinegar. Bring to a boil, then reduce heat and simmer for 30 minutes, until vegetables are tender.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with a dollop of sour cream and garnished with fresh dill.
