Briam is a Greek roasted vegetable medley that’s both hearty and healthy. The combination of fresh vegetables and herbs, baked to perfection, makes it a delicious and wholesome side dish or main course.

Ingredients

  • 2 zucchinis, sliced
  • 2 eggplants, sliced
  • 4 potatoes, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 400 g canned tomatoes
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. Layer zucchini, eggplant, potatoes, onion, and garlic in the dish.
  3. Pour canned tomatoes over the vegetables and drizzle with olive oil. Season with oregano, salt, and pepper.
  4. Bake for 45-50 minutes until vegetables are tender. Enjoy!
