 Cacio e Pepe is a classic Roman pasta dish that’s both simple and indulgent. With just cheese and black pepper, this dish transforms into a creamy, comforting meal that’s perfect for a quick dinner.

Ingredients

  • 400 g spaghetti or pasta of choice
  • 1 cup grated Pecorino Romano cheese
  • 2 tbsp black pepper, freshly ground
  • Salt
  • 2 tbsp butter (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta cooking water before draining.
  2. In a large pan, toast black pepper over medium heat.
  3. Add drained pasta to the pan, along with a small amount of reserved pasta water. Stir to coat.
  4. Remove from heat and add Pecorino Romano cheese, tossing until melted and creamy. Add butter if desired for extra richness.
  5. Serve immediately. Enjoy!
