Chicken in Red Whine (Coq au Vin) is a classic French dish where tender chicken is slow-cooked in rich red wine, aromatic herbs, and hearty vegetables. The depth of flavors in this comforting stew will transport your taste buds straight to the French countryside.

Ingredients

  • 1 whole chicken, cut into pieces
  • 200 g bacon, diced
  • 2 cups red wine
  • 1 cup chicken broth
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add the chicken pieces and brown on all sides. Remove and set aside.
  3. Add onions, carrots, and garlic to the pot. Cook until softened.
  4. Stir in the flour and tomato paste, cook for 1 minute.
  5. Pour in the red wine and chicken broth, stirring to combine.
  6. Return the chicken and bacon to the pot. Add the bouquet garni.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until chicken is tender.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving. Enjoy!
