 Warm up with a bowl of Eintopf, a traditional German stew that’s a perfect comfort food. This rich, hearty dish combines tender meat with a medley of vegetables and beans, all simmered together to create a satisfying and flavorful one-pot meal.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 2 potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into pieces
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup beef broth
  • 1 cup water
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onion and garlic. Cook until softened, about 5 minutes.
  3. Add the carrots and potatoes, and cook for another 5 minutes.
  4. Return the beef to the pot and add the tomatoes, beef broth, water, thyme, rosemary, and bay leaf. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for about 1 hour, or until the meat is tender.
  6. Add the green beans and kidney beans, and cook for an additional 15-20 minutes, until the vegetables are tender.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
  8. Garnish with chopped parsley and serve hot. Enjoy!
