1cup dried white beans, soaked overnight
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
400g canned tomatoes
1/4cup olive oil
1 tsp dried oregano
1 tsp paprika
Salt and pepper
Instructions
Drain and rinse beans. In a large pot, cover beans with water and simmer for 45 minutes to 1 hour until tender. Drain and set aside.
In the same pot, heat olive oil and cook onion and garlic until softened. Add carrots and celery, cooking for 5 minutes.
Stir in tomatoes, oregano, paprika, salt, and pepper. Add beans and simmer for 30 minutes. Enjoy!
