2lbs potatoes, peeled and thinly sliced
1 large onion, thinly sliced
1 can (2 oz) anchovy fillets, drained and chopped
1 1/2cups heavy cream
1/2cup milk
2 tbsp butter
Salt and pepper to taste
1/4cup breadcrumbs
Instructions
Preheat the oven to 350°F (175°C). Grease a baking dish with butter.
Arrange a layer of potato slices on the bottom of the dish. Top with a layer of onions and a few anchovy fillets. Repeat the layers, finishing with a layer of potatoes.
Pour the heavy cream and milk over the potatoes. Dot the top with butter and season with salt and pepper.
Sprinkle breadcrumbs over the top.
Bake for 1 hour, or until the potatoes are tender and the top is golden brown. Let sit for a few minutes before serving. Enjoy!
