  • 1 whole chicken
  • 2 lemons
  • 4 cloves garlic
  • Fresh rosemary
  • Fresh thyme
  • 4 tbsp olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Rinse the chicken and pat dry. Season the inside with salt and pepper.
  3. Stuff the cavity with halved lemons, crushed garlic cloves, and fresh herbs.
  4. Rub the outside of the chicken with olive oil, and season with salt and pepper.
  5. Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 75°C (165°F).
  6. Let the chicken rest for 10 minutes before carving.
  7. Serve with roasted vegetables or a side salad. Enjoy!
