 A nutritious and hearty salad with cooked lentils, cherry tomatoes, cucumbers, and red onion, all tossed in a lemon-herb dressing.

Ingredients

  • 1 cup cooked lentils
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine lentils, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together lemon juice, olive oil, parsley, salt, and pepper.
  3. Toss the salad with the lemon-herb dressing and serve chilled. Enjoy!
