Macaroni Salad

 A creamy pasta salad mixed with vegetables and sometimes bacon. Ideal for potlucks and picnics.

Ingredients

  • 2 cups cooked macaroni
  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 2 strips cooked bacon, crumbled (optional)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked macaroni, celery, red bell pepper, and red onion.
  2. In a small bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
  3. Pour dressing over macaroni mixture and toss to coat.
  4. Add crumbled bacon if desired and mix gently.
  5. Chill in the refrigerator for at least 1 hour before serving. Enjoy!
