Madeleines are delightful French sponge cakes with a signature shell shape. These light and buttery treats are perfect for a tea-time snack or elegant dessert, with a hint of lemon zest adding a refreshing touch.

Ingredients

  • 100 g butter
  • 2 large eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • Zest of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F). Grease madeleine molds.
  2. Melt butter and let cool.
  3. In a bowl, whisk eggs and sugar until pale and thick. Fold in flour, baking powder, lemon zest, and vanilla.
  4. Stir in melted butter. Spoon batter into molds.
  5. Bake for 10-12 minutes until golden and springy. Enjoy!
