1 onion, sliced
1/4cup peanuts
2 tbsp fish sauce
2 tbsp tamarind paste
1 tbsp sugar
1 cinnamon stick
2–3 cardamom pods
Fresh cilantro for garnish
Instructions
Heat a large pan over medium heat and add the massaman curry paste. Cook for 1-2 minutes until fragrant.
Add half of the coconut milk and bring to a boil. Add the meat and cook until done.
Add the remaining coconut milk, potatoes, onion, cinnamon stick, and cardamom pods. Simmer until the potatoes are tender.
Stir in fish sauce, tamarind paste, sugar, and peanuts. Adjust seasoning to taste.
