Minestrone Soup is a hearty and wholesome Italian vegetable soup packed with seasonal veggies and pasta. It’s a nutritious and comforting dish that’s perfect for any time of the year.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes
  • 1 cup cannellini beans, drained
  • 4 cups vegetable broth
  • 1 cup small pasta (e.g., elbow macaroni)
  • 1 tsp dried basil
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened. Add garlic and cook for another minute.
  2. Stir in zucchini, green beans, diced tomatoes, cannellini beans, vegetable broth, and basil. Simmer for 20 minutes.
  3. Add pasta and cook until tender. Season with salt and pepper.
