A quintessential Thai street food, Pad Thai is a delightful mix of stir-fried rice noodles, vegetables, and protein, topped with peanuts and lime. This dish is known for its perfect balance of sweet, sour, and salty flavors, making it a favorite worldwide.

Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 garlic clove, minced
  • 1 chicken breast, sliced thinly (or tofu for vegetarian)
  • 2 eggs, lightly beaten
  • 1 cup bean sprouts
  • 1/2 cup sliced green onions
  • 1/4 cup chopped peanuts
  • Lime wedges, for serving

Sauce:

  • 3 tbsp fish sauce (or soy sauce for vegetarian)
  • 1 tbsp tamarind paste
  • 2 tbsp sugar
  • 1 tbsp rice vinegar

Instructions

  1. Soak the rice noodles in warm water for 20 minutes, then drain and set aside.
  2. Heat the oil in a large pan or wok over medium-high heat. Add garlic and stir-fry until fragrant.
  3. Add the chicken (or tofu) and cook until done. Push to one side of the pan.
  4. Pour the beaten eggs into the pan and scramble. Mix with the chicken.
  5. Add the soaked noodles and the sauce ingredients. Stir-fry until the noodles are soft and everything is well combined.
  6. Toss in the bean sprouts and green onions, and cook for another 1-2 minutes.
  7. Serve hot, garnished with chopped peanuts and lime wedges. Enjoy!
