 Piperade is a vibrant Basque dish made with sautéed bell peppers, onions, and tomatoes. Its rich, savory flavors and colorful presentation make it a delightful accompaniment or a flavorful main course.

  • 4 bell peppers, sliced
  • 1 onion, sliced
  • 3 tomatoes, peeled and chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened.
  2. Add bell peppers and cook until they begin to soften.
  3. Stir in tomatoes, paprika, salt, and pepper. Simmer for 20-25 minutes until vegetables are tender. Enjoy!
