  • 3 cups chicken or vegetable broth

  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in the pumpkin puree and broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Stir in the coconut milk, ginger, and cinnamon. Season with salt and pepper.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
