Ingredients

  • 1000g Tomato
  • 400g Zucchini
  • 300g Eggplant
  • 200g Red Pepper
  • 200g Green Pepper
  • 200g Onion
  • 20ml Olive Oil
  • Fresh Parsley
  • Salt
  • Pepper
  • Basil

Instructions

  1. Cut the eggplant and zucchini into 1.5-2 cm thick slices, sprinkle with salt and leave for 20 minutes.
  2. Cut the tomatoes crosswise and scald them in hot water and cut into quarters.
  3. Heat the olive oil in a pan, fry the eggplant and zucchini slices briefly, set aside.
  4. Cut the peppers into 1.5 cm thick slices, remove the seeds, set aside.
  5. Fry finely chopped onion and garlic pressed through a press briefly.
  6. Pour tomatoes and spices, mix, cook for 15 minutes over low heat.
  7. Layer the slices of vegetables, and pour the whole thing with tomatoes. Sprinkle with chopped parsley. Enjoy!
