Rillettes are a savory, spreadable meat pâté, typically made with pork or duck. The slow-cooked, tender meat is shredded and mixed with flavorful fat, resulting in a rich and creamy spread perfect for spreading on crusty bread or crackers.

Ingredients

  • 500 g pork shoulder, cut into chunks
  • 200 g pork belly, cut into chunks
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup chicken broth
  • 1 tsp thyme
  • 1 tsp bay leaf
  • Salt and pepper
  • 2 tbsp lard or duck fat

Instructions

  1. In a large pot, combine pork shoulder, pork belly, garlic, onion, and chicken broth. Add thyme, bay leaf, salt, and pepper.
  2. Simmer over low heat for 2.5 hours, until the meat is very tender.
  3. Remove meat from the pot and shred it with two forks. Return to the pot and cook for an additional 30 minutes, adding lard or duck fat as needed to keep the mixture moist.
  4. Transfer to jars or ramekins and let cool. Chill in the refrigerator before serving. Enjoy!
