Rizogalo is a creamy Greek rice pudding flavored with vanilla and sprinkled with cinnamon. It’s a comforting dessert that’s both simple and satisfying.

Ingredients

  • 1/2 cup short-grain rice
  • 1 liter milk
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • Ground cinnamon, for garnish

Instructions

  1. In a pot, bring rice and a cup of milk to a boil. Reduce heat and simmer until rice is tender.
  2. Add remaining milk and sugar, and cook over low heat, stirring frequently, until thickened (about 20 minutes).
  3. Stir in vanilla extract and pour into serving dishes.
  4. Let cool, then garnish with ground cinnamon before serving. Enjoy!
