Salade Lyonnaise is a classic French salad featuring crisp frisée lettuce, savory bacon lardons, and a perfectly poached egg. The tangy vinaigrette ties it all together, creating a delicious and satisfying salad.

Ingredients

  • 1 head frisée lettuce, torn
  • 200 g lardons (bacon pieces)
  • 4 eggs
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

  1. Cook lardons in a skillet until crispy. Drain on paper towels.
  2. In a small bowl, whisk together vinegar, mustard, olive oil, salt, and pepper.
  3. Poach eggs in simmering water until whites are set and yolks are runny.
  4. Toss frisée with vinaigrette and lardons. Top with poached eggs. Enjoy!
