Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, chopped
  • 1 can (14 oz) coconut milk
  • 4 cups chicken or seafood broth
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 lime, juiced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger, cooking until softened.
  2. Stir in red bell pepper and cook for another 2 minutes.
  3. Add coconut milk, broth, red curry paste, and fish sauce. Bring to a boil.
  4. Reduce heat and simmer for 5 minutes. Add shrimp and cook until pink and cooked through, about 3-4 minutes.
  5. Stir in lime juice and season with additional fish sauce if needed.
  6. Serve hot, garnished with fresh cilantro and lime wedges.
