Ingredients

  • 4 large bell peppers
  • 200 g fresh spinach
  • 150 g feta cheese
  • 1 onion
  • 2 cloves garlic
  • 1 cup cooked quinoa
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh dill for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until translucent.
  4. Add fresh spinach and cook until wilted.
  5. In a bowl, combine the cooked quinoa, spinach mixture, and crumbled feta cheese. Season with salt and pepper.
  6. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  7. Bake for 25-30 minutes until the peppers are tender.
  8. Garnish with freshly chopped dill before serving. Enjoy!
