2 large sweet potatoes
400g black beans, drained and rinsed
1 onion
2 cloves garlic
400g diced tomatoes
1 red bell pepper
2 tbsp chili powder
1 tsp cumin
2 tbsp olive oil
Salt and pepper
Fresh cilantro for garnish
Instructions
Peel and dice the sweet potatoes and bell pepper.
In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until translucent.
Add the diced sweet potatoes and bell pepper. Cook for 5-7 minutes.
Stir in the chili powder and cumin, cooking for 1-2 minutes until fragrant.
Add the diced tomatoes and black beans. Bring to a simmer.
Cook for 25-30 minutes until the sweet potatoes are tender.
Season with salt and pepper to taste.
