Ingredients

  • 2 large sweet potatoes
  • 400 g black beans, drained and rinsed
  • 1 onion
  • 2 cloves garlic
  • 400 g diced tomatoes
  • 1 red bell pepper
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh cilantro for garnish

Instructions

  1. Peel and dice the sweet potatoes and bell pepper.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until translucent.
  3. Add the diced sweet potatoes and bell pepper. Cook for 5-7 minutes.
  4. Stir in the chili powder and cumin, cooking for 1-2 minutes until fragrant.
  5. Add the diced tomatoes and black beans. Bring to a simmer.
  6. Cook for 25-30 minutes until the sweet potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with freshly chopped cilantro before serving. Enjoy!
