Tarte aux Fraises is a delightful French strawberry tart featuring a crisp pastry crust filled with rich pastry cream and topped with fresh, juicy strawberries. It’s a sweet and refreshing dessert that’s perfect for showcasing seasonal fruit.

For the pastry:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 egg yolk

For the filling:

  • 1 cup pastry cream
  • 500 g fresh strawberries, hulled and halved
  • 1/4 cup apricot jam

Instructions

  1. Preheat oven to 180°C (350°F).
  2. For the pastry, mix flour, butter, sugar, and egg yolk until a dough forms. Roll out and press into a tart pan.
  3. Bake for 15 minutes, then let cool.
  4. Spread pastry cream over the cooled crust. Arrange strawberries on top.
  5. Heat apricot jam and brush over the strawberries for a glossy finish. Chill before serving. Enjoy!
