Ingredients

  • 4 cups cooked jasmine rice
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 cup diced pineapple
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup shrimp, chicken, or tofu
  • 2 eggs, lightly beaten
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp curry powder
  • Green onions and cilantro for garnish

Instructions

  1. Heat oil in a large pan or wok over medium-high heat. Add garlic and onion, and stir-fry until fragrant.
  2. Add the diced pineapple and mixed vegetables, and cook for 2-3 minutes.
  3. Push everything to one side of the pan and pour in the beaten eggs. Scramble the eggs and then mix everything together.
  4. Add the cooked rice, soy sauce, fish sauce, and curry powder. Stir-fry until well combined and heated through.
  5. Serve hot, garnished with green onions and cilantro.
