Brighten up your meal with the Tropical Shrimp Bowl. Juicy shrimp, marinated in a zesty citrus sauce, are paired with mango and avocado for a bowl that’s bursting with tropical flavors.

Ingredients

  • 300 g large shrimp, peeled and deveined
  • 1 mango, diced
  • 1 avocado, diced
  • 1 cup quinoa
  • 1 1/2 cups water
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1 tsp honey
  • 1/2 tsp chili flakes
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to the package instructions and keep warm.
  2. In a bowl, mix the lime juice, honey, chili flakes, olive oil, salt, and pepper. Toss the shrimp in the marinade and let sit for 10-15 minutes.
  3. Heat a grill pan or skillet over medium heat. Cook the shrimp for 2-3 minutes per side, or until pink and opaque.
  4. Divide the cooked quinoa between two bowls. Top with shrimp, diced mango, and avocado.
  5. Garnish with chopped cilantro.
