 Savor the delicious and cheesy Veggie Quesadillas. Filled with a colorful mix of bell peppers, onions, and melted cheese, these quesadillas are perfect for a quick and satisfying meal any day of the week.

  • 8 large tortillas
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tbsp olive oil
  • Salt and pepper
  • Salsa and sour cream for serving

Instructions

  1. In a large pan, heat olive oil over medium heat. Add sliced bell peppers and onion, cooking until tender. Season with salt and pepper.
  2. Place one tortilla in a separate pan over medium heat. Sprinkle with a layer of shredded cheese, followed by the cooked vegetables, and another layer of cheese.
  3. Top with a second tortilla and cook until the bottom tortilla is golden and the cheese is melted. Flip and cook the other side.
  4. Remove from heat and cut into wedges.
  5. Serve the veggie quesadillas with salsa and sour cream. Enjoy!
