4 bell peppers

1/2cup olive oil
1 onion, chopped
2 cloves garlic, minced
1/2cup pine nuts
1/2cup currants
1/2cup fresh parsley, chopped

Instructions
Preheat oven to 180°C (350°F). Cut tops off tomatoes and peppers, and scoop out the insides.
In a pan, heat olive oil and cook onion and garlic until softened. Stir in rice, pine nuts, currants, parsley, salt, and pepper.
Stuff tomatoes and peppers with rice mixture and place in a baking dish.
Drizzle with a little olive oil and bake for 45-50 minutes until vegetables are tender. Enjoy!
