  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups zucchini, diced
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add zucchini and vegetable broth. Bring to a boil, then reduce heat and simmer until zucchini is tender, about 15 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
