Ingredients

  • 2 Eggplants
  • 100 g Walnuts
  • 3 cloves Garlic
  • 4 tbsp Olive Oil
  • 1 bunch Parsley
  • Salt
  • Pepper
  • Chili
  • Fresh Coriander

Instructions

  1. Wash the eggplants and cut them into thin but long slices.
  2. Season each slice with a little salt and set aside for 20 minutes
  3. Pour 2 tablespoons of olive oil into a blender and add nuts, spices and peeled garlic cloves. Blend the whole thing thoroughly.
  4. Heat the remaining oil in the pan.
  5. Rinse the eggplants of excess salt and fry them on all sides in a pan.
  6. Put a teaspoon of nut paste on the fried eggplant slices and roll them up carefully.
  7. Decorate the ready rolls with chopped parsley. Enjoy!
