Ingredients
- 2 Eggplants
- 100 g Walnuts
- 3 cloves Garlic
- 4 tbsp Olive Oil
- 1 bunch Parsley
- Salt
- Pepper
- Chili
- Fresh Coriander
Instructions
- Wash the eggplants and cut them into thin but long slices.
- Season each slice with a little salt and set aside for 20 minutes
- Pour 2 tablespoons of olive oil into a blender and add nuts, spices and peeled garlic cloves. Blend the whole thing thoroughly.
- Heat the remaining oil in the pan.
- Rinse the eggplants of excess salt and fry them on all sides in a pan.
- Put a teaspoon of nut paste on the fried eggplant slices and roll them up carefully.
- Decorate the ready rolls with chopped parsley. Enjoy!
