Ingredients
- 2 Whole Wheat Tortilla
- 200g Chorizo Sausages
- 1 Red Onion
- 1/2 ball Mozzarella
- 1/2 can Red Beans
- 1/2 can Canned Corn
- 1 tbsp Tomato Concentrate
- 3 tbsp Canola Oil
- Fresh Parsley
- Pepper
- Salt
- Chili
- Lime Juice
Instructions
- Cut the onion into feathers and fry in hot canola oil.
- Add sliced chorizo and season to taste with chilli and lime juice.
- Add red beans and canned corn to the pan, cook for 5-7 minutes. After a while, add tomato paste, mix thoroughly and simmer covered.
- Heat the tortilla in the pan. Add the prepared stuffing and finely chopped mozzarella. Heat for a while.
- Sprinkle with chopped parsley and cover with a second tortilla. Heat gently until the cheese melts.Enjoy!
