Ingredients
- 1 whole chicken
- 2 lemons
- 4 cloves garlic
- Fresh rosemary
- Fresh thyme
- 4 tbsp olive oil
- Salt and pepper
Instructions
- Preheat the oven to 190°C (375°F).
- Rinse the chicken and pat dry. Season the inside with salt and pepper.
- Stuff the cavity with halved lemons, crushed garlic cloves, and fresh herbs.
- Rub the outside of the chicken with olive oil, and season with salt and pepper.
- Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 75°C (165°F).
- Let the chicken rest for 10 minutes before carving.
