Ingredients

  • 4 bell peppers
  • 500 g ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large pan, heat olive oil over medium heat. Add diced onion and garlic, cooking until fragrant.
  4. Add ground beef, cooking until browned. Stir in cooked rice, diced tomatoes, paprika, salt, and pepper.
  5. Stuff the bell peppers with the beef mixture and place them in a baking dish.
  6. Top with shredded cheese and bake for 35-40 minutes until the peppers are tender and the cheese is melted.
  7. Garnish with fresh parsley before serving. Enjoy!
