Ingredients

  • 400 g penne pasta
  • 2 chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add sliced chicken breast and Cajun seasoning, cooking until the chicken is browned and cooked through. Remove and set aside.
  3. In the same pan, add sliced bell peppers, onion, and minced garlic, cooking until tender.
  4. Pour in the heavy cream and chicken broth, bringing the mixture to a simmer.
  5. Return the chicken to the pan and add the cooked penne pasta, stirring to combine.
  6. Season with salt and pepper, and garnish with fresh parsley before serving. Enjoy!
