- 8 large tortillas
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 2 tbsp olive oil
- Salt and pepper
- Salsa and sour cream for serving
Instructions
- In a large pan, heat olive oil over medium heat. Add sliced bell peppers and onion, cooking until tender. Season with salt and pepper.
- Place one tortilla in a separate pan over medium heat. Sprinkle with a layer of shredded cheese, followed by the cooked vegetables, and another layer of cheese.
- Top with a second tortilla and cook until the bottom tortilla is golden and the cheese is melted. Flip and cook the other side.
- Remove from heat and cut into wedges.
- Serve the veggie quesadillas with salsa and sour cream. Enjoy!
