- 4 chicken thighs
- 2 red bell peppers, sliced
- 2 green bell peppers, sliced
- 1 onion, chopped
- 4 tomatoes, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp thyme
- Salt and pepper
Instructions
- In a large skillet, heat olive oil over medium heat. Add chicken thighs and brown on both sides. Remove and set aside.
- In the same skillet, add onions and garlic, and cook until softened.
- Add bell peppers and cook for 5 minutes. Stir in tomatoes, paprika, thyme, salt, and pepper.
- Return chicken to the skillet and cover. Simmer for 30 minutes, until chicken is cooked through and the sauce is thickened.
- Serve with rice or crusty bread. Enjoy!
