Ingredients

  • 4 chicken thighs
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • 1 onion, chopped
  • 4 tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • Salt and pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chicken thighs and brown on both sides. Remove and set aside.
  2. In the same skillet, add onions and garlic, and cook until softened.
  3. Add bell peppers and cook for 5 minutes. Stir in tomatoes, paprika, thyme, salt, and pepper.
  4. Return chicken to the skillet and cover. Simmer for 30 minutes, until chicken is cooked through and the sauce is thickened.
  5. Serve with rice or crusty bread. Enjoy!
