Pâté de Campagne is a traditional French country pâté made with a mix of pork and liver, seasoned with aromatic herbs and spices. This rustic, savory spread is perfect for serving with crusty bread and pickles.

Ingredients

  • 500 g pork shoulder, finely chopped
  • 200 g pork liver, finely chopped
  • 100 g pork fat, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1 egg
  • 1 tsp thyme
  • 1 tsp sage
  • 1/2 tsp allspice
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Line a pâté dish with parchment paper.
  2. In a bowl, mix pork shoulder, pork liver, pork fat, onion, garlic, wine, egg, thyme, sage, allspice, salt, and pepper.
  3. Pack the mixture into the prepared dish and smooth the top. Cover with foil.
  4. Bake for 1.5 hours, then remove foil and bake for an additional 30 minutes.
  5. Let cool, then chill in the refrigerator for at least 24 hours before serving. Enjoy!
