Ingredients

  • 2 large eggplants, sliced
  • 500 g ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1 tsp cinnamon
  • 1 tsp oregano
  • 1/2 cup red wine (optional)
  • 2 cups béchamel sauce
  • 1/2 cup grated Parmesan cheese
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Brush eggplant slices with olive oil and bake until tender.
  2. In a skillet, cook ground beef with onion and garlic until browned. Add tomatoes, cinnamon, oregano, red wine, salt, and pepper. Simmer for 15 minutes.
  3. In a baking dish, layer eggplant slices, followed by the meat sauce. Spread béchamel sauce on top and sprinkle with Parmesan.
  4. Bake for 30-40 minutes until golden and bubbling. Let cool slightly before serving. Enjoy!
