Fasolada is a traditional Greek bean soup brimming with vegetables and aromatic spices. Its comforting, hearty flavors and nourishing ingredients make it a staple in Greek cuisine.

Ingredients

  • 1 cup dried white beans, soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 400 g canned tomatoes
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper

Instructions

  1. Drain and rinse beans. In a large pot, cover beans with water and simmer for 45 minutes to 1 hour until tender. Drain and set aside.
  2. In the same pot, heat olive oil and cook onion and garlic until softened. Add carrots and celery, cooking for 5 minutes.
  3. Stir in tomatoes, oregano, paprika, salt, and pepper. Add beans and simmer for 30 minutes. Enjoy!
