- 1 cup dried white beans, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 400 g canned tomatoes
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper
Instructions
- Drain and rinse beans. In a large pot, cover beans with water and simmer for 45 minutes to 1 hour until tender. Drain and set aside.
- In the same pot, heat olive oil and cook onion and garlic until softened. Add carrots and celery, cooking for 5 minutes.
- Stir in tomatoes, oregano, paprika, salt, and pepper. Add beans and simmer for 30 minutes. Enjoy!
