- 1 cup dried giant beans , soaked overnight
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 400 g canned tomatoes
- 1/2 cup tomato paste
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 cup fresh parsley, chopped
- Salt and pepper
Instructions
- Drain and rinse beans. Boil in fresh water for 1-1.5 hours until tender. Drain and set aside.
- Heat olive oil in a pot, then sauté onion and garlic until softened.
- Stir in tomatoes, tomato paste, oregano, cumin, salt, and pepper. Simmer for 10 minutes.
- Add beans and cook for 30 minutes on low heat, allowing flavors to meld.
