Ingredients

  • 1 cup dried giant beans , soaked overnight
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1/2 cup tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper

Instructions

  1. Drain and rinse beans. Boil in fresh water for 1-1.5 hours until tender. Drain and set aside.
  2. Heat olive oil in a pot, then sauté onion and garlic until softened.
  3. Stir in tomatoes, tomato paste, oregano, cumin, salt, and pepper. Simmer for 10 minutes.
  4. Add beans and cook for 30 minutes on low heat, allowing flavors to meld.
  5. Garnish with fresh parsley before serving. Enjoy!
