- 2 zucchinis, sliced
- 2 eggplants, sliced
- 4 potatoes, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 400 g canned tomatoes
- 1/4 cup olive oil
- 1 tsp dried oregano
- Salt and pepper
Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- Layer zucchini, eggplant, potatoes, onion, and garlic in the dish.
- Pour canned tomatoes over the vegetables and drizzle with olive oil. Season with oregano, salt, and pepper.
- Bake for 45-50 minutes until vegetables are tender. Enjoy!
