Koupes are delicious Greek meat-filled croquettes with a crispy exterior and savory filling. They’re perfect for appetizers or as part of a festive spread.

Ingredients

  • 250 g ground beef or lamb
  • 1 onion, chopped
  • 1/4 cup pine nuts
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cinnamon
  • Salt and pepper
  • 2 cups fine bulgur
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/4 cup olive oil
  • Salt

Instructions

  1. Prepare the filling: Sauté onion in olive oil until softened. Add ground meat, pine nuts, parsley, cinnamon, salt, and pepper. Cook until browned and set aside.
  2. Prepare the dough: Mix bulgur with water and let sit for 30 minutes. Combine with flour, olive oil, and salt to form a dough.
  3. Roll out dough and cut into small circles. Place a spoonful of filling in the center of each circle and fold to form a half-moon shape.
  4. Fry in hot oil until golden brown. Drain on paper towels before serving. Enjoy!
