- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 400 g canned tomatoes
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp ground cumin
- Salt and pepper
Instructions
- Rinse lentils and set aside. In a pot, heat olive oil and cook onions, carrots, and garlic until softened.
- Add lentils, tomatoes, oregano, cumin, salt, and pepper. Pour in enough water to cover lentils by about 5 cm (2 inches).
- Simmer for 40-45 minutes until lentils are tender. Adjust seasoning as needed.
- Serve warm. Enjoy!
