This hearty Greek lentil soup is both nutritious and flavorful. With tender lentils and vegetables in a savory tomato broth, it’s a comforting and wholesome meal.

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper

Instructions

  1. Rinse lentils and set aside. In a pot, heat olive oil and cook onions, carrots, and garlic until softened.
  2. Add lentils, tomatoes, oregano, cumin, salt, and pepper. Pour in enough water to cover lentils by about 5 cm (2 inches).
  3. Simmer for 40-45 minutes until lentils are tender. Adjust seasoning as needed.
  4. Serve warm. Enjoy!
