Panzanella is a refreshing Italian bread salad featuring crispy cubes of stale bread combined with juicy tomatoes, cucumbers, and fresh basil. Tossed in a tangy vinaigrette, it’s a perfect summer salad.

Ingredients

  • 4 cups stale bread, cubed
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Toast bread cubes until crispy.
  2. In a large bowl, combine bread cubes, tomatoes, cucumber, red onion, and basil.
  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Toss bread mixture with dressing and let sit for 10 minutes before serving. Enjoy!
