- 4 cups stale bread, cubed
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper
Instructions
- Preheat oven to 180°C (350°F). Toast bread cubes until crispy.
- In a large bowl, combine bread cubes, tomatoes, cucumber, red onion, and basil.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Toss bread mixture with dressing and let sit for 10 minutes before serving. Enjoy!
