Ingredients

  • 4 veal shanks (osso buco)
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper
  • Gremolata (lemon zest, garlic, parsley) for garnish

Instructions

  1. Preheat oven to 180°C (350°F). Heat olive oil in a large ovenproof pot and brown veal shanks on all sides.
  2. Remove shanks and sauté onion, carrots, celery, and garlic until softened.
  3. Return shanks to pot and add white wine. Simmer until wine is reduced by half.
  4. Stir in tomatoes, beef broth, thyme, bay leaf, salt, and pepper. Cover and transfer to the oven.
  5. Cook for 2 hours, or until meat is tender and falling off the bone.
  6. Garnish with gremolata before serving. Enjoy!
