- 4 veal shanks (osso buco)
- 1/4 cup olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup white wine
- 1 can diced tomatoes
- 2 cups beef broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper
- Gremolata (lemon zest, garlic, parsley) for garnish
Instructions
- Preheat oven to 180°C (350°F). Heat olive oil in a large ovenproof pot and brown veal shanks on all sides.
- Remove shanks and sauté onion, carrots, celery, and garlic until softened.
- Return shanks to pot and add white wine. Simmer until wine is reduced by half.
- Stir in tomatoes, beef broth, thyme, bay leaf, salt, and pepper. Cover and transfer to the oven.
- Cook for 2 hours, or until meat is tender and falling off the bone.
- Garnish with gremolata before serving. Enjoy!
