Ingredients

  • 2 cups cooked risotto (cooled)
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Form cooled risotto into balls, placing a cube of mozzarella in the center of each.
  2. Dredge each ball in flour, dip in beaten eggs, and coat with breadcrumbs.
  3. Heat oil in a deep pan and fry arancini until golden brown and crispy. Drain on paper towels.
